Not Grass-Fed (however, people should really say Grass-Finished, as these cattle grazed freely until last November when the grass went dormant). Really good marbling is a product of feeding grain during the finishing stage. These yearling heifers are fed by hand twice a day a ration of sorghum silage and rolled corn with soybean meal. Our carcasses typically yield in the upper 1/3 of Choice, just a step below Prime! Carcasses are dry-aged for several weeks before slicing to your specifications, so you’ll get a more flavorful and tender experience than the wet-aged products you find in the grocery store.

Sold by the half or whole beef or by the split-side (same volume as a quarter, but a mixture of cuts from both the front and rear). A split-side will be about 90#-100# of meat and take 4-5 cubic feet of freezer space, a half will be about #180-#200, and if you buy a whole beef you will end up with around 360#-400# of meat.
